Barolo Rocche di Castiglione 2021

Viticulture is conducted entirely according to organic methods (certified since 2010). The grapes are carefully selected by hand, both in the vineyard and in the cellar, followed by gentle destemming and pressing. Fermentation and maceration last approximately 25 days, followed by malolactic fermentation in December. The wine then ages for 30 months in 20-hectoliter French oak casks. After bottling at the end of summer, the wine rests in the bottle for another year to fully develop its balance and complexity.
