The Barolo Riserva Leon represents the pinnacle of Rivetto’s craftsmanship and biodynamic philosophy. The grapes are hand-harvested from meticulously managed vineyards in Serralunga d’Alba. Fermentation occurs spontaneously with indigenous yeasts in stainless steel tanks, followed by a long maceration of approximately 30 days to achieve maximum extraction and complexity. After malolactic fermentation, the wine ages for five years in large Slavonian oak casks, after which only the most promising barrels are selected for bottling as Riserva. The wine then rests further in the bottle before release. This Barolo reaches its optimal expression after 15 to 22 years of aging and is among the most refined and long-lived wines of the estate.
