Mario Gagliasso’s Barolo Riserva is produced using the classic Guyot method with medium-short pruning. During the growing season, a double green harvest takes place to limit yields to approximately 5,500 kg per hectare, ensuring optimal concentration. The grapes are hand-harvested at full maturity and carefully selected. Fermentation occurs in temperature-controlled stainless steel tanks at 30–31 °C, with a maceration period of 30 to 35 days. Malolactic fermentation proceeds spontaneously in stainless steel.
After this phase, the wine ages for 10 months in French barriques (10% new and 90% used), after which the individual wines from Torriglione and Rocche dell’Annunziata are blended and aged for an additional 48 months in older, large oak casks. Finally, the wine undergoes 24 months of bottle refinement. This extensive aging process results in a Barolo Riserva of great depth, velvety tannins, and impressive complexity.
